Trang is a province boarding the Indian Ocean. The people embrace a culture of eating Trang Roast Pork cooked by a special process unique only to this place. Trang Roast Pork is popularly eaten with coffee as a kind of breakfast in the style of Trang people. Other meal complements include dumplings, dim sum and fried dough. These kinds of food are widely taken from morning time and have become a unique characteristic of the place. Such food is influenced by the eating culture of more than 80% of the local people who are Chinese descendants. It has made the place come to be known as Trang- A Gourmet Town. Also, roast pork is served at weddings, new year and mid year celebrations and other feasts or even at funerals and offering ceremonies. The province of Trang organizes a yearly Trang Roast Pork Festival in September.

ในวงการอาหารมีเชฟคนไทยที่ไปสร้างชื่อเสียง เผยแพร่อาหารไทยให้ชาวต่างประเทศได้รู้จักในต่างแดน หนึ่งในนั้นคือ คุณอรุณ สัมพันธวิวัฒน์ ซึ่งเปิดร้านอาหารไทยชื่อ อรุณ ที่เมืองชิคาโก อเมริกา เมื่อกว่า 20 ปีมาแล้ว จนประสบความสำเร็จในระดับแนวหน้าของโลก ได้รับรางวัลการันตีมากมายนับไม่ถ้วน หนึ่งในนั้นคือรางวัลออสการ์ของวงการอาหารโลก

Trang Roast Pork refers to roast pork produced in the province of Trang by a special process and recipe derived from the traditional knowledge of Trang people.
Characteristics - Crispy skin, golden yellow in color, tender aromatic meat, delicious harmonious taste. When made from Moo Kee Pra, an added characteristic is less fat in the meat.

The pork meat is marinated in the “Ou Chieng Fun” seasoning and other ingredients
namely salt, sugar, soy sauce, garlic, pepper for at least 6 – 8 hours in a room protected from insects by mosquito nets.
History About 100 years ago, Trang was a seaport trading with foreign countries through
the Kantang Port. Chinese people from Canton immigrated to the place and disembarked from their boats at Kantang District or the Trang town river mouth. These Chinese raised a breed of pig which they brought with them on their journey and the pigs were able to thrive very well in the new environment. After a while, the first roast pork was sold by the ancestors of the Fongchan family. Fong Saingam, a Chinese man from Canton, began making roast pork over 80 years ago. He was the first to initiate selling roast pork in those days. The pork was called the Fongchan roast pork. According to history, the ancestors of the Fongchan family employed Cantonese people who were skilled in roasting pork for this business. Later on, selling roast pork was taken up more popularly as a trade by the Trang people. Many helpers at the Fongchan roast pork business set up businesses of their own and there were tens of businesses selling roast pork. The trade was handed down to later generations under the name Trang Roast Pork.

ผู้เขียนได้ร่วมทริปไปกับคุณอรุณ และมีโอกาสได้รู้จักกับญาติพี่น้องของคุณอรุณ ซึ่งได้สร้างความประหลาดใจให้กับผู้เขียนเป็นอย่างมาก นั่นคือได้เห็นบุคคลในภาพถ่ายเมื่ออดีตของนางอาภา สัมพันธวิวัฒน์ ซึ่งมีศักดิ์เป็นน้องสะใภ้ของคุณอรุณ ได้เล่าว่า “ เมื่อวันอังคารที่ 17 มีนาคม พ.ศ. 2502 พระบาทสมเด็จพระเจ้าอยู่หัวและสมเด็จพระนางเจ้าฯ พระบรมราชินีนาถ ได้เสด็จพระราชดำเนินมาเยี่ยมเมืองตรัง โดยรถยนต์พระที่นั่ง ผ่านถนนสายสำคัญ ๆ เพื่อให้ราษฎรได้มีโอกาสเฝ้าทูลละอองธุลีพระบาทรับเสด็จโดยทั่วกัน ขณะนั้น น้าอาภา ซึ่งอายุเพียง 7 ขวบ (ปัจจุบันอายุ 57 ปี) และน้าจันทร์เพ็ญ วีรวรรณ ซึ่งเป็นลูกพี่ลูกน้อง พ่อแม่ของทั้งสองได้แต่งตัวให้ลูกสาว และตั้งโต๊ะรับเสด็จบริเวณหน้าบ้าน ระหว่างทางที่รถยนต์พระที่นั่งผ่าน ก็ได้หยุดจอดรถและลูกสาวทั้งสองก็ได้มีโอกาสถวายช่อดอกไม้ นำมาซึ่งความปลาบปลื้มต่อทั้งสองครอบครัวอย่างล้นพ้น แม้วันเวลาจะล่วงเลยผ่านมากว่า 50 ปีแล้ว แต่น้าอาภาก็ยังคงจดจำภาพเหตุการณ์นั้นได้ดี ปัจจุบัน น้าอาภา รับราชการครู ที่โรงเรียนมัธยม อำเภอย่านตาขาว จังหวัดตรัง
